. . . savour and learn the cooking of Tuscany
The
I Tre Baroni hotel and restaurant came about through
the desires of the Baroni family to create a place which
welcomes its guests with warmth and hospitality and
reflects their own dedication to providing the best.
The great care, determination and sacrifice involved
in developing the hotel and restaurant has created a
place that the Baroni brothers are rightly proud of
and which is one of the most prestigious places in the
province of Arezzo.
The
hotel has been developed in such a way that it compliments
the beautiful valley of Casentino and is in keeping
with the surrounding Parco Nazionale delle Foreste Casentinesi.
The
Hotel and Restaurant is set in the lovely resort village
of Moggiona, formerly owned by the Camaldolensian monks
for several centuries, and lies in the lush Casentino
Forest which is a National Park. For centuries the monks
devoted their energies to the care of the local flora
and fauna and for sixty years the Park Authority has
worked to preserve this natural reserve, which is the
second largest forest in Europe.
I
Tre Baroni hotel and restaurant fits perfectly into
this fantastic environment, where so many places seem
to be in a time warp. The hotel offers the discerning
visitor a comfortable base from which to explore places
of outstanding beauty and to learn Tuscan cooking.
From
January to 20th July and from 15th September to 10th
December, I Tre Baroni organises residential cooking
courses of varied duration, according to their customers'
needs. Classes are about home-made pasta, fillings,
ragouts, sauces, hors d'oeuvres, meat and fresh fish.
In addition to cooking classes outings are organised
to find the local produce as well as to learn about
it and the Tuscan culinary traditions, and how to choose
your ingredients.
Tuscany
is the ideal place to learn to cook and I Tre Baroni
is a wonderfully relaxing setting in which to learn
and enjoy yourself. If you are interested only in a
specific subject, you can make a reservation just for
one class. Classes are held at the I Tre Baroni Hotel
and Restaurant in Moggiona of Poppi and at San Pier
Piccolo, in Arezzo's historic town centre.

the afternoon there's a fourth lesson:
all guest can taste a different cheese
selection with honey by Camaldoli. With
cheese they'll drink DOC, DOCG and I.G.T.
(Typical Geographic Indication) Tuscan
wine and sweet wine by Casentino. A specialized
Chef speak about cheese and his particularity.

In
2004 Matteo, Andrea and Filippo Baroni opened I Tre
Baroni. Through their passion for what they do and their
sheer determination I Tre Baroni is now included in
the famous Michelin and Green Michelin Guide, as well
as the Veronelli and LEspresso guides.
Chef
Filippo Baroni
The
youngest brother, Fillippo was born in Sansepolcro,
a little town near Arezzo. At the age of thirteen
he went to the National Cookery School in Chianciano
Terme for five years and graduated when he was eighteen.
After completing his studies he became first chef
in one of the top restaurants in Arezzo and Siena.
From there he went to London to develop his skills
in European cuisine, to learn different techniques
and to learn English.
Chef
Matteo Baroni
The
eldest brother, Matteo was born in Arezzo and on leaving
school he went to the University of Political Science
in Florence where he obtained his doctor's degree.
After finishing university he worked for two years
as a waiter in many restaurants in Tuscany before
becoming an assistant chef in an Arezzo restaurant.
His creativity and passion for experimentation with
classic Italian recipes gave him the opportunity to
work with many top chefs which led to him becoming
head chef in the best restaurant of the region.
Matteo
loves nothing more than to create the Tuscan recipes
from the past, using only traditional and local produce.
Andrea
Baroni
The
middle brother, Andrea is the Maitre d' and the Sommelier
of I Tre Baroni. He studied Literature and Philosophy
at the University of Florence where he obtained his
doctor's degree. From University he went to work in
Rome as an assistant Maitre d' where he gained experience
in different restaurants and hotel, recommended by
the Michelin Guide. As a result of the experience
gained Andrea decided to take a sommelier course as
a result of which he now specialises in Tuscan wines,
spirits and cheeses.
As
well as his duties as Maitre d' and Sommelier, Andrea
is also the general manager of I Tre Baroni and responsible
for organising everything and ensuring each guest
has a wonderful experience whilst staying with them.
THE

Accommodation
is provided in twenty-one different units, all of
which have been carefully and elegantly furnished.
They are equipped with every modern comfort such as
TV, satellite TV, mini bar, safe, telephone, hairdryer,
direct satellite Internet connection. Most of them
have an external independent access. Guests can now
choose from the following standards:
THE
APARTMENTS
Each
of the five apartments has a small hallway, two separate
bedrooms and a bathroom. The bedrooms are equipped
with every modern comfort and sleep three and up to
five if required, in double and / or single beds.
They are ideal for couples with little children not
old enough to sleep on their own. With either a view
over the valley or the forest and the village of Moggiona.
