Chicken Chow Mein

It is many years since Hub-UK was first launched. It has been created from recipes contributed form all over the world, from professionals and amateurs alike. A great many of the recipes do not have any details as to who sent them in or from where they came. It would be a shame not to share them with you for this reason alone.

This is one such recipe. If you know where it originated, or perhaps it is even yours, let me know and I will add the necessary credits and acknowledgements.

Ingredients

3 tablespoons oil
2 minced cloves garlic
2 chicken breasts cut small
8 sliced mushrooms
2 stalks celery cut into strips
1/4 cup sliced bamboo shoots

Seasoning Sauce:
1 chicken bouillon cube
1 tablespoon soy sauce
2 tablespoons dry sherry
1 tablespoon cornstarch

5 ounces chow mein noodles

Method

  • Combine sauce ingredients and set aside.
  • Add oil to hot wok.
  • Swirl, add garlic and stir fry for 30 seconds.
  • Add chicken. Stir fry for 3 minutes or until chicken turns opague. Remove and set side.
  • Add vegetables and stir fry over medium heat for 2 minutes. Push vegetables to sides of wok.
  • Restir sauce mixture and add to center of wok, stirring until thick and bubbly.
  • Add chicken and heat.
  • Warm chow mein noodles in 325°F oven for 5 minutes.
  • Serve with chow mein noodles.
