It
is many years since Hub-UK was first launched. It has
been created from recipes contributed form all over
the world, from professionals and amateurs alike. A
great many of the recipes do not have any details as
to who sent them in or from where they came. It would
be a shame not to share them with you for this reason
alone.
This
is one such recipe. If you know where it originated,
or perhaps it is even yours, let me know and I will
add the necessary credits and acknowledgements.

Ingredients
2
x onions, chopped
1 x clove garlic, finely chopped
1/4 cup olive oil
1 lb lean minced meat
1 cup canned tomatos, drained and chopped
1 tin Tamales cut in 1" chunks
1 tin corn niblets
1 tin olives, sm, chopped and sliced
1 tbsp Chili powder (more to taste)
1/2 tsp salt
1/2 tsp pepper
1/2 lb sharp cheddar cheese, grated
Method
- Sautee
onions and garlic in 1/4 cup of olive oil. Remove
from pan.
- Add
ground meat and brown, but do not break up too much.
Remove excess fat and liquid from skillet.
- Return
onions and garlic to pan. Add remaining ingredients
and nix together.
- Transfer
to a casserole dish.
- Top
with about 1/2 pound grated sharp cheddar cheese.
- Bake,
uncovered, for 1 hour at 350°F.
