It
is many years since Hub-UK was first launched. It has
been created from recipes contributed form all over
the world, from professionals and amateurs alike. A
great many of the recipes do not have any details as
to who sent them in or from where they came. It would
be a shame not to share them with you for this reason
alone.
This
is one such recipe. If you know where it originated,
or perhaps it is even yours, let me know and I will
add the necessary credits and acknowledgements.

Ingredients
1
x scallion
1/4 cup medium dry sherry
1 tsp sugar
1 x clove garlic, finely chopped
1/2 tsp salt
1 x dash pepper
2 x slice finely chopped fresh ginger
2 1/2 tbsp peanut oil
2 lb beef chuck
1/2 cup soy sauce
3 cup chicken stock
Method
- Cut
green part of scallion into 2" pieces.
- Combine
all ingredients except meat, oil and chicken stock
in a bowl and set aside.
- Heat
oil in heavy skillet and brown meat quickly on all
sides.
- Add
mixture from bowl and cook, stirring to heat and blend
for about 3 minutes.
- Heat
stock in saucepan and add to beef. Simmer covered
for 1 1/2 to 2 hours or until meat is tender.
- Slice
meat and serve hot or cold.
