Mint and Nut Chocolate Fudge

It is many years since Hub-UK was first launched. It has been created from recipes contributed form all over the world, from professionals and amateurs alike. A great many of the recipes do not have any details as to who sent them in or from where they came. It would be a shame not to share them with you for this reason alone.

This recipe is one such recipe. If you know where it originated, or perhaps it is even yours, let me know and I will add the necessary credits and acknowledgements.

Ingredients

7 oz marshmallow cream (1 jar)
1 1/2 cup sugar
2/3 cup evaporated milk
1/4 cup butter
1/4 tsp salt
1 1/2 cup mint chocolate chips
1/2 cup chopped nuts
1 tsp vanilla extract

Method

  • In a heavy saucepan combine the marshmallow cream, sugar, evaporated milk, butter and salt. Bring fully to the boil over medium heat, stirring constantly.
  • Remove from heat and add the mint chocolate chips, stirring until the chips are melted and the mixture is smooth.
  • Add the nuts and vanilla extract.
  • Pour into an 8 inch square pan lined with tin foil.
  • Chill in the fridge for about 2 hours until firm and then cut into 1 inch squares.
