It
is many years since Hub-UK was first launched. It has
been created from recipes contributed form all over
the world, from professionals and amateurs alike. A
great many of the recipes do not have any details as
to who sent them in or from where they came. It would
be a shame not to share them with you for this reason
alone.
This
recipe is one such recipe. If you know where it originated,
or perhaps it is even yours, let me know and I will
add the necessary credits and acknowledgements.

Ingredients
1
cup granulated sugar
1 cup brown sugar
3/4 cup light corn syrup
1 cup water
1/3 cup butter
1 teaspoon vanilla
Method
- Put
sugar, syrup and water into a saucepan and set over
direct heat.
- Stir
until the sugar is dissolved, then cook without stirring
to the stiff ball stage (120°C).
- Add
butter and cook to the medium-crack stage (138°C)
for soft butterscotch or to the hard-crack stage (149°C)
for brittle candy.
- Remove
from heat and add the flavouring and pour on to a
greased slab.
- Mark
with knife while still warm and when cold break into
pieces.
