Ingredients
2 large cloves
garlic, minced
1 teaspoon mashed anchovies or anchovy paste
(optional, but
recommended)
1/2 teaspoon kosher salt
1/2 teaspoon black pepper
2 tablespoons fresh lemon juice
1 tablespoon quality mayonnaise
1/4 cup virgin olive oil
8 cups torn or chopped romaine lettuce
1/2 cup (2 oz.) Shredded Imported Parmesan
Cheese
Croutons (optional)
Method
In small bowl,
combine garlic, anchovy's salt and pepper.
Whisk in lemon
juice and mayonnaise.
Slowly add oil,
whisking until smooth and thickened.
In large bowl,
gently toss together lettuce and dressing;
add Parmesan cheese.
