Caesar Salad

Ingredients

Les Kincaid

2 large cloves garlic, minced
1 teaspoon mashed anchovies or anchovy paste (optional, but
recommended)
1/2 teaspoon kosher salt
1/2 teaspoon black pepper
2 tablespoons fresh lemon juice
1 tablespoon quality mayonnaise
1/4 cup virgin olive oil
8 cups torn or chopped romaine lettuce
1/2 cup (2 oz.) Shredded Imported Parmesan Cheese
Croutons (optional)

Method
  • In small bowl, combine garlic, anchovy's salt and pepper.
  • Whisk in lemon juice and mayonnaise.
  • Slowly add oil, whisking until smooth and thickened.
  • In large bowl, gently toss together lettuce and dressing; add Parmesan cheese.
  • Toss gently.
  • Top with croutons and serve.

This is an eggless dressing.
