recipe comes from Ana

in Peru. I asked Ana
for a little background and this is what she
had to say:
"As
I love to cook, my hobby is collecting recipes
from many countries. A short time ago I started
my own catering service, as well as doing my
other job which is bookbinding. Both I do at
home. Before that I was working for an oil company,
but it recently closed down its operations in
Peru"

Ingredients
1
1/2 cups of cooked quinoa
1 cup cooked and diced chicken
1 diced tomato
1 medium onion finely chopped
5 black olives
1 hard boiled egg
3 fresh eggs
1/2 cup diced ricotta cheese
2 tablespoons paprika
oil
1 clove garlic,
salt
pepper
1/4 cup chopped parsley
Parmesan cheese.

Method
Sauté
onion, garlic in oil, add chicken, tomato,
paprika, salt, pepper, parsley, simmer for
a couple of minutes . If it dries add a little
of chicken stock.
Put
quinoa in a bowl and add chicken mixture and
3 beaten eggs. Mix well and add raisins, olives,
cheese. Correct seasoning with salt and pepper.
Grease
baking pan and place half of quinoa, sprinkle
slices of hard boiled egg and cover with rest
of quinoa and sprinkle with Parmesan cheese.
