Apple and Blackberry Pie

This recipe form the new book from Chef John Burton Race entitled Coming Home .

The book accompnaies the TV series Return of the Chef which is about the return of John Burton Race and his family to England from their year in France. The series is centered around his acquisition of the premises for his new restaurant known as The New Angel (formerly the famous Carved Angel restaurant in Dartmouth), its refurbishment, teething problems and day to day running all interspersed with bits of family life.

This pie is lovely served with a puddle of double cream.

Ingredients

Sweet Pastry:
(Makes about 0.5 kg)
150g unsalted butter
55g icing sugar
1 egg
250g soft plain flour

Filling:
450g peeled and cored Bramley apples, cut into quarters
100g caster sugar
100g blackberries

Method

  • Preheat the oven to 230°C / 450°F / Gas 8.
  • Place the apples in a bowl, then add the caster sugar and blackberries. Gently toss them together, making sure that the apples are completely covered in sugar.
  • Lightly butter a 25cm round pie dish. Remove the pastry from the refrigerator. Cut a 200g piece for the base of the pie, leaving 300g for the top. Lightly dust a worktop with flour, then roll out each piece of pastry to a rough circle, to a thickness of about 3mm.
  • Lay the smaller circle of pastry in the base of the pie dish and gently press it down. Spoon the apple and blackberry filling into the centre of the pastry, leaving a 2cm border around the edge. With a pastry brush, brush a little water around the border and upper edge of the pastry. Carefully place the larger pastry circle over the filling and gently press down around the edge to seal the border. Cut off any excess pastry with a palette knife. Using your forefinger and thumb, crimp the edge of the pastry to ensure a good seal.
  • Lightly brush the top of the pie with water and sprinkle with a level dessertspoon of caster sugar. With the point of a knife, make a small cut in the centre of the pie for the steam to escape. Cook in the oven for 45 minutes or until golden.
