Lemon Sole Skewers

The
campaign forms the theme of Seafood Week 2006 which
runs from the 6th - 13th October. Now in its sixth year,
Seafood Week is the biggest celebration of seafood in
the UK encouraging people to try the many different
varieties of seafood available and be adventurous with
new recipes and cooking methods.
Ingredients
4
x 170g (6oz) lemon sole, fresh or defrosted, skinned
For
the marinade:
1 lemon, juice and zest
2 limes, juice and zest
15ml spoon (1 tablespoon) clear honey
15ml spoon (1 tablespoon) olive oil
5ml spoon (1 teaspoon) ground coriander
5ml spoon (1 teaspoon) paprika
5ml spoon (1 teaspoon) ground cumin
15ml spoon (1 tablespoon) chopped fresh mint
Method
Mix
all of the marinade ingredients together and place
in a shallow dish.
- Halve
each fillet lengthways and thread onto skewers. Place
the skewers in the marinade and turn until covered.
Leave to marinate for up to 15 minutes.
- Cook
under a preheated grill for 6 minutes turning occasionally.
- Heat
any remaining marinade in a small pan and pour over
the skewers.
