This is a very traditional tapas dish and is served
all over Spain. It is the most common tapa to be served
with a beer.
Ingredients
for Spanish Potato Salad
3 medium potatoes
150g fresh frozen peas
120g green beans
1 large carrot
1 small onion
1 small red pepper
2 tablespoons green olives
2 hard boiled eggs
1 medium tomato
1 tablespoon capers
For the dressing:
200ml mayonnaise
1 teaspoon French mustard
1 tablespoon lemon juice
How
to make Spanish Potato Salad
- Wash
the potatoes and cut into chunks or thick slices.
Peel and dice the carrot. In a saucepan, cook the
potato and carrot until just tender. Then add the
peas and green beans to the same pan and cook for
a further 5 minutes until all the vegetables are done.
- Drain
the vegetables and place in a large bowl or serving
dish.
- Peel
and finely chop the onion, finely dice the pepper
and tomato and slice the hard boiled eggs.
- Add
the pepper, onion, eggs, capers, tomato and olives
to the other vegetables and mix together.
- Make
a dressing by mixing together the mayonnaise, mustard
and lemon juice in a separate bowl.
- Spoon
the dressing onto the salad a tablespoon at a time
and mix together, you don't want to overload the salad
with the mayonnaise dressing.
- Serve
with a garnish of chopped parsley and ground black
pepper.
