Roasted Garlic Cloves and Shallots en Papillote

Ingredients

Method

  1. Select garlic cloves that are similar in size
  2. Select shallots that are similar in size
  3. Peel the shallots and garlic (or leave un peeled if preferred) toss in a little salt to season
  4. Heat a frying/sauté pan, add a small amount of oil
  5. Carefully place in the shallots and cook gently for 3 - 5 minutes
  6. Add the garlic cloves and continue for 2 minutes
  7. Place into tin foil pouches, season and seal
  8. Place in the oven (180ºC) and roast for approx 8 minutes
  9. Remove from the oven and keep warm until required. (Will only hold for approximately 10 minutes. After this they will begin to shrivel and look unappetising.)
  10. For service remove from foil and use as required. (These may be left in the foil if a well prepared pocket has been used that would suit presenting to a customer)
